I can verify that I don't use twice as much cable in order to lift any of the weight, it's really 1:1. So I'm a bit baffled. None-the-less it's a great system, I just wish I had a force meter to test their claim.

Typically, the force is divided over the pulleys + friction, and increases the distance required to move the weight, thereby the effort remains constant (more pulleys equals less force + more distance = same effort as pulling weight directly, more force but less travel) Physics are hard to argue with.
According to the manufacturer the pulley system doubles the weight of the ..well.. weights. I have a hard time figuring that out. I hope one of you can eli5.
