Home-made kaassoufflés (cheese pie)

Basically make a (hot) cheese sauce (Milk, old cheese, a bit of salt, and a pinch of pepper) -> pop it in the freezer for about 2 hours. Then cut it into pieces. Water the inside of the dough and add the cheese then fold the dough -> use a fork to press the edges of the dough together. Water the outside and yeet it through breadcrumbs. Pop it back in the freezer for another 2 hours before airfrying it at 180 to 200C for about 6 minutes, less if you oil fry it.

  • Supported file types are: GIF, JPG, PNG
  • Maximum file size allowed is 8000 KB.
  • Images greater than 200x200 pixels will be thumbnailed.

Mmm...cheese pie...<drool>

I used Zaanse Hoeve 48+ old cheese (Dutch) along with Gruyere Lait Cru 2.5k (Swiss) 50/50.
Next time I'll try Beemster Royaal Grand Cru 48+ (Dutch).

Very hot!

Now my version has only got like 50 gram of grated cheese. But one of these is enough cause it's very rich (or heavy on the stomach)

Pop them in the freezer!

I got fed up with the minimal cheese that was present at the snackbar and supermarket variants. So I decided to make it myself.

Ingredients:
Milk
Old cheese (the older the better)
Salt
Pepper
---
Water
Dough!
Breadcrumbs
Flour

In my variants I did not add pepper to the cheese sauce but I highly recommend it. One normally consumes these along fries, and a frikandel.
